Every year during Paryushan, I find myself reconnecting with myself in purest form. For me, this festival is about fasting, restraint, and also about mindfulness, compassion, and cooking with simplicity. As someone who has always been an advocate of no onion, no garlic cooking, I truly believe that food prepared this way carries a lightness and sattvik energy that nurtures both body and soul.
Over the years, I’ve experimented with traditional dishes as well as created new recipes that honor this philosophy. My goal has always been to show that wholesome food can still be full of flavor, joy, and creativity, even within the beautiful boundaries of Paryushan traditions.
