Diet Potato Salad - Side Dish & Salad
Ingredients
- 1 tsp Coconut Oil
- 25-30 Raw Peanuts
- 3 Boiled Potato Medium SIze
- 1/2 cup Red & Yellow Bell Pepper mix
- 1 tsp Dry Thyme
- 1 tsp Red Chilli Flakes
- 1/2 tsp Kosher Salt (Rock Salt)
- 1 tsp Apple Cider Vinegar
- 1 tbsp Lemon Juice
- 2 tbsp Green Coriander
- 5-6 Basil Leaves
- 8-10 Mint Leaves for Garnishing
Instructions
- Roast the Peanuts in Coconut Oil till the color changes
- Cut the boiled potato as per your choice or refer in the video
- Now add all the ingredients and mix it well with light hands
- Keep it in the refrigerator for at least 20 minutes
- Garnish it with mint leaves at the time of serving
