Diet Potato Salad - Side Dish & Salad

Ingredients
  

  • 1 tsp Coconut Oil
  • 25-30 Raw Peanuts
  • 3 Boiled Potato Medium SIze
  • 1/2 cup Red & Yellow Bell Pepper mix
  • 1 tsp Dry Thyme
  • 1 tsp Red Chilli Flakes
  • 1/2 tsp Kosher Salt (Rock Salt)
  • 1 tsp Apple Cider Vinegar
  • 1 tbsp Lemon Juice
  • 2 tbsp Green Coriander
  • 5-6 Basil Leaves
  • 8-10 Mint Leaves for Garnishing

Instructions
 

  • Roast the Peanuts in Coconut Oil till the color changes
  • Cut the boiled potato as per your choice or refer in the video
  • Now add all the ingredients and mix it well with light hands
  • Keep it in the refrigerator for at least 20 minutes
  • Garnish it with mint leaves at the time of serving
