Vegetable Poha
Poha is a popular Indian Breakfast. Batata (Potato) Poha is a famous form of Poha but here I am making "Vegetable Poha" in my way by using more vegetables besides only potato.
Ingredients
- 200 gm Poha
- 1/4 cup Mustard oil
- 1 pinch powdered hing
- 1/2 tsp Mustard Seeds (Rai)
- 1/4 cup Raw Peanuts
- 1/4 cup Broken Cashew
- 1/2 cup Raw Potato finely chopped
- 1/2 cup Peas
- 1/4 cup Capsicum Chopped
- 1 Green Chili Chopped
- 1/4 Cup Onion Finely Chopped
- 1 tsp Turmeric powder (haldi)
- 1/2 cup Tomato Chopped
- 1.5 tsp Salt
- 1 tsp Red Chili Powder
- 1/8 cup lemon juice
- chopped coriander
Instructions
- Take the Poha (rice Flakes) & wash it gently in running water
- Take mustard oil in a pan and wait till it gets heated
- Add a pinch of Hing and mustard seeds
- When mustard seed crackle, add raw peanuts and broken cashew in it and saute till slight change in colour
- Add finely chopped raw potato and saute it till half cooked
- Then add peas and cover the pan with a lid till all the peas crackle
- Add chopped capsicum, green chilli in it. Mix it well
- Add onion if you want
- Add Turmeric powder (Haldi) and mix it well
- Now add washed poha in it
- Add Tomato, Turmeric Powder (Haldi), Salt, red chilli powder, lemon juice and coriander in it
- Mix well with light hands
- Your super delicious "Vegetable Poha" is ready
- Serve it hot with your favourite spicy mixture of namkeen
