Take the Poha (rice Flakes) & wash it gently in running water
Take mustard oil in a pan and wait till it gets heated
Add a pinch of Hing and mustard seeds
When mustard seed crackle, add raw peanuts and broken cashew in it and saute till slight change in colour
Add finely chopped raw potato and saute it till half cooked
Then add peas and cover the pan with a lid till all the peas crackle
Add chopped capsicum, green chilli in it. Mix it well
Add onion if you want
Add Turmeric powder (Haldi) and mix it well
Now add washed poha in it
Add Tomato, Turmeric Powder (Haldi), Salt, red chilli powder, lemon juice and coriander in it
Mix well with light hands
Your super delicious "Vegetable Poha" is ready
Serve it hot with your favourite spicy mixture of namkeen
